KAI Kamagata is the latest series designed by top German chef TIM Mälzer in collaboration with KAI knife experts, so the knives are a mix of German and Japanese design. The sharpness of the knives comes from their 14 degree sharpening angle but differs from other Japanese knives in its durability, these knives can take a bit of a beating and hold their blade brilliantly.
In Japanese, Kamagata means a certain type of knife shape. The traditional Kamagata Usuba has a straight blade that curves at the end; the Tim Mälzer Kamagata series is based on these knives but the knives still have their own characteristics.
The blade material is 1.4116 steel which will not rust and is easy to keep sharp. The handle material is POM plastic, which is hard, durable, hygienic and easy to clean.

Japanese kitchen knives are made of very hard and thin metal. Therefore, they must not be chopped or twisted into any hard material such as frozen or bony meat, coconut, canning jar lids, etc. There is a risk of concrete pieces coming off the blade. Quality kitchen knives should also never be washed in a dishwasher, but preferably immediately after use in a quick water wash and dry. For storage, any solution where the knife blades do not come into contact with other metal objects is suitable.
